- 2 to 2 1/4 cups unbleached all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 3/4 teaspoon salt
- 2 teaspoons pumpkin pie spice
- 1 cup firmly packed light brown sugar
- 1/2 cup granulated sugar
- 3 large eggs room temperature
- 1/2 cup pumpkin puree (unsweetened - not pie filling)
- 1 teaspoon pure vanilla extract
- 4 tablespoons unsalted butter, melted and cooled
- 2/3 cup granulated sugar for rolling
- 1 cup powdered sugar for rolling
